For me Sinko de Mayo is truly a day to celebrate. Few people have come to know the “true” story of the origin of Sinko de Mayo. It is my pleasure to set the record straight.

A little known fact is that back in 1912, Hellmann’s mayonnaise was manufactured in England. In fact, the Titanic was carrying 12,000 jars of the condiment scheduled for delivery in Vera Cruz, Mexico, which was to be the next port of call for the great ship after its stop in New York. This would have been the largest single shipment of mayonnaise ever delivered to Mexico but as we know, the great ship did not make it to New York.

The ship hit an iceberg and sank and the cargo was forever lost. The people of Mexico, who were crazy about mayonnaise and were eagerly awaiting its delivery, were disconsolate at the loss. Their anguish was so great, that they declared a National Day of Mourning which they still observe to this day. The National Day of Mourning occurs each year on May 5th and is known, of course as Sinko de Mayo.

When the first Europeans came to the “New World” times were tough, especially during the harsh winters. Not much could be done except wait out the cold until spring. An old widow woman named Emily Shadow started a tradition that is still seen today. During her first winter here, she kept busy fattening up her prized pig for slaughter at the beginning of the warm spring. When spring arrived, there was more pork meat than Emily needed. She found that if she ground up the pork, it was easier to store. Soon all of her neighbors were doing the same thing in order to survive. Pigs were slaughtered at the beginning of February every year and the meat ground for storage. That’s traditionally called Ground Hog Day and it’s said if a hog sees Emily Shadow, he knows his winter is over.

I was actually playing word games with May 4th. "May the 4th be with you", think Star Wars, "may the force be with you".
But I did enjoy the history lesson on Cinco De Mayo. I always thought it was to celebrate the "Battle of Puebla" where the Mexicans defeated the French in 1862.
Hellmans mayo on a ham sandwich sounds good right now,,, :)
